Wholesome Healthy Pasta with Tomatoes, Veggies & Fresh Basil

Pasta has been one of my fav since a long time, what's more i survived our holiday in "Rome & Venice" on pasta and different sorts of veggie pasta's alone..;).


Travelling is not very easy, especially when your "Vegan", is one standard line my hubby says all the while, but the sweetheart has not once tried to convert me into his type.... which is a hardcore "Carnivorous"(pssst...he won't sapre me for this comment but chalta hai yaar....;).


Of course the version you see here is the healthier version which i normally stick to...but if you want to have a richer, yummier version then you must try adding at least 1/4 stick of butter towards the end and of course you could  sprinkle a bit of Parmesan Cheese if you'd like to.....;) 

Well "Archu"... this is especially for you, hope you're reading this one...if you are then try it and do let me know...!!!

Pasta is one thing where the variations can depend completely on your tastes...and yet it tastes...excellent...!!

Ingredients:
  1. Pasta (Spaghetti) - 250gms.
  2. Fresh Tomatoes - 7-8nos medium sized (keep the skin or you can use the ready made pasta tomato sauce easily available in the market).
  3. White Onion(Preferable) - 1 Medium Sized(Roughly chopped).
  4. Olive Oil - 1-2tbsp(as per your requirement).
  5. Fresh Basil - few springs(can be substituted with dried basil as well).
  6. Dried Oregano- 1 pinch (Optional/ but it really gives an excellent Herby flavor if added).
  7. Dried Basil - 1 pinch.
  8. Pickled dill cucumber - 1no.
  9. Carrot - 1 small sized ( shredded).
  10. Sun dried Tomatoes(Optional) - few pieces. 

Method:
  • Boil water for spaghetti (the string or noddle type pasta) since pasta is available in different types you could use the one of your choice and allow it to cook well.
  • Roughly chop Onions, Tomatoes, Basil Leaves,Pickled Dill Cucumber(Optional),& set aside with shredded carrot.
  • Heat a deep bottomed pan with Olive oil , once hot add Onions,Dried basil & oregano.
  • Sauté the onions and add tomatoes and cook until they turn nice & soft.
  • Add sun dried tomatoes ,Salt & Pepper as per your taste allow to cook well for say about 15 mins(keep pan partially covered).
  • Drain Spaghetti & add to tomatoes in the saucepan, stir fry all the ingredients well.
  • Add 1 tsp of Olive Oil with a pinch of Oregano & dried basil before taking pan off the flame.
  • Serve hot, Enjoy...;)
Preparation time: 10 mins
Cooking time: 40 mins.
Serves: 2.

  1. Hmmmmmm nice recipe didi, a different kind of dish with pasta. I can make swiss people have this as they are just used to pasta with mushroom, tomato, Spinach or Non-veg sauces. I am preparing this dish coming weekend.

+Homemade curds Recipe: It's amazing how life changes after marriage! Especially simple things such as consumption of curds too .....after being marrying a ' mallu boy ', I was amazed at the way they either mix curd in everything or rather cook almost everything with curd!!
