Racking our brains every single day what to do for breakfast, lunch, evening snack or even dinner for that matter..is one thing which is very irritating for all of us, unless we live in a joint family which is a very rare phenomenon these days ..:) where we can get lots of ideas from the other women of the house or worst come scenario even curse our stars together for not being able to think of something quickly...at least things done in a group feels very comforting at times...!!
Anyways, i was going through one of those days where i had to look after what my daughter was up to every single minute,plus decide what can be todays breakfast choice, especially that which can be easily consumed by my toddler as well...browsing through my pantry for what can be today option i came across ragi flour sitting out there for some time...!! well i just had an idea.. that changed my day...;)
Ragi dosa, doesn't take more than 10 mins and can be had with simple chutney or with yummy onion roast or anything of your choice...anyways since i have lack of time i went with onion roast.
ragi as shailu mentioned in her blog, has cooling properties for your body, gr8 nutrient for kids and the aged as well in fact good for people of all ages..;)
well getting on with the recipe which you will see for yourself is quite simple...!!
Ingredients:
  1. Finger millets flour(Ragi atta /Nachani atta): 1& 1/2 cups.
  2. Whole wheat flour(for bonding): 1 cup.
  3. Onions: 2 nos (Medium sized, finely chopped).
  4. Green chillies: 3-4 nos(Finely chopped,depending upon your tolerance ).
  5. Curry leaves: few (finely chopped).
  6. Jeera: 1 tsp.
  7. Salt: To taste.
  8. Baking soda: 1 tsp.
  9. Vegetable Oil: as required to grease the flat-bed pan or "tawa".
  10. Water: Enough to bring batter to right consistency.
Method:
  • Mix the Ragi flour & wheat flour together, add salt, jeera, curry leaves, onions, green chillies, baking soda well.
  • Add water and slowly fold the batter and stir continuously so the flour doesn't form any  knots.
  • Keep the pan on medium heat, grease the pan and spread the batter evenly on it, allow it to cook(look for signs where the batter turns darker and the sides come off easily, turn the dosa to the other side to cook evenly on both sides.
  • Serve hot, enjoy with Onion Roast or Chutney of your choice.
Preparation Time: 10-15 mins.
Serving size: Makes 10-15 dosa's.


Onion Roast:
Well very very simple, it's ready in a jiffy:


Ingredients:
  1. Onions: 4-5 (Big sized, Chopped length wise).
  2. Jeera: 1tsp.
  3. Curry leaves: few.
  4. Red Chilly powder: 1tsp.
  5. Coriander powder: 1/2 tsp.
  6. Turmeric: 1pinch.
  7. Urad Dal: 1 tsp.
  8. Salt : To taste.
  9. Vegetable Oil: 2 - 3 tsp.
Method:
  • Take a saucepan, keep flame on medium heat,add 2 tsp oil, add jeera,Urad dal,red chilly powder, coriander powder,Turmeric powder, once the jeera splutter's add onions to it.
  • Let the onions sauté, add salt and curry leaves and allow to cook for about 5 mins.
  • Onion roast is ready to eat.
Preparation time: 5 - 10 mins.

Coffee Liqueur - (Non - Alcoholic): This is something i used when i made my daughter's Birthday Cake earlier,and i really can vouch on this one for it's taste, i actually shouldn't be terming this one as liqueur, because there is no alcohol in it.  But frankly you know what, I can't just call it plain coffee-cocoa-sugar syrup.  I'd say this one's just too plain for something so ecstatic tasting,In fact, this one is so amazing.
