Maddur Vada's all the way from Karnataka.

Coming to think  of travelling from Bangalore to Mysore by road, one thing which hit's my mind in an instant is the one thing that's very famous and irresistible our very own "Maddur Vada's".
If travelling in a bus the bus stops at maddur for sure for a coffee break and you can see almost 80 - 90 percent people grabbing a hand at these gorgeous looking extremely tasty things. Though they are something's that's fried, .... but you don't travel through  Maddur everyday now do you..?
All said & done the good thing about this recipe is that you could instantly make it with whatever ingredient's you have at home.
Well being here in dubai you miss out on all these pleasure's in life, you could go to the nearest Indian restaurant (which is like available in ever small nook & corner in dubai), but believe me they are not worth one penny of the price they charge nor is the taste even close to what you'd love to hog...!! but all said and done there is no choice then in case you'd want to go out for dinner. But you could eat a lot of Arabic, Mexican, Thai varieties out here, or just go for simple take away's from the nearest Pizza hut or Mc Donald's...;( or KFC's .
Any way's let me stop fretting, and let's get on with the recipe.


Ingredients:

  1. Rawa( Chiroti rawa/ upma or better known as the finer variety): 4 Tbsp.
  2. Maida flour / wheat flour: 2 tbsp ( for binding).
  3. Baking soda: 1/2 tsp.
  4. Jeera: 1 tsp.
  5. Red chilly powder: 1/2 tsp.
  6. White Til(sesame seeds): 2 tsp.
  7. Onions: 2 small sized.(finely chopped).
  8. Green chillies: 3 - 4 nos(finely chopped, i used a little more since, everybody likes it spicy at my place). 
  9. Curry leaves: few( chopped finely).
  10. Vegetable Oil: for frying.
  11. Salt: to taste.
  12. Water: enough to mix dough.
Method:
  • Mix all the dry ingredients( Rawa,flour,jeera,til (sesame),chilly powder, soda & salt), thoroughly in a bowl, heat oil in a Kadai for frying.
  • Take 1 - 2 tsp of hot oil from the kadai and pour on the dry mixture, mix well. 
  • Add onions, green chillies,curry leaves to the dry mixture ,mix thoroughly.
  • Mix water little by little and mix dough until stiff like roti or poori dough, if you use wheat flour it will turn out to be slightly sticky, but if you leave the dough covered  for about 5 mins in a bowl it should be fine if you still find it sticky, just grease your palms a bit.).
  • Grease your palms and make small balls out of the dough, flatten the balls make it slightly flatter than the thickness of cookies.
  • Deep fry them in oil until they turn golden brown, place on a tissue and leave aside until you finish frying all.
  • Serve  hot with spicy chutney of your choice, coconut chutney or even taste's great with tomato sauce.
Enjoy Maddur Vada's,(My hubby who normally does not eat anything fried hogged about 4 of these down...:) ...I just Love it when this happens).

Normally when you say homemade idly's there s a certain  stigma attached to it,oh what's your proportion..?? considering the fact that not e veryone get their idly batter proport ion right the first few times.  But once you get the  of cottony soft cloud like fluffy idly's there's no looking back..!! It's actually damn easy you just got to remember 1:1/4 proportion of rice:urad dal respectively. While soakin it along with a fourth of a tsp of fenugreek and the secret of cottony, cloud like  softnes s comes from just a handful of beaten rice soaked along with the ingredients.
