A dish i have loved since i was a little child.This was usually made at my home for breakfast or as one of the items on the banana/bel patra/leaf platter on festivals, Also packed into my tiffin box in mango season.
An Iconic traditional rice dish in +Karnataka, very common dish in every household in Karnataka region during the mango season. Simple,subtle, and very easy as well as a dish that you could store in the refrigerator for up to a month or more and use as and when you desire. Just cook rice and toss in some of the mango mix and mix well and tadaa....eat all you can...!!! As for people who love to eat "Khatta" then i'm damn sure you will love it..!!

Cooking Time: 10 mins
Serves: 1 Cup Mix



What goes Inside: 

Ingredients:
  1. Raw Mango: 4-5 small sized raw green mangoes.
  2. Cooked Rice: As Required.
  3. Mango Masala mix/Mango Thokku: As Required.
For Tempering:
  1. Oil: 1-2 Tbsp(you can add more if u wish).
  2. Urad Dal: 1/4 Tsp.
  3. Channa Dal: 1/4 Tsp.
  4. Mustard Seeds/Rai: 1/4 Tsp.
  5. Turmeric/Haldi Powder: 1/4 Tsp.
  6. Asefoetida Powder/Hing: 2-3 Pinches.
  7. Salt: To Taste.
  8. Curry Leaves: 10-15 nos.
  9. Green Chilly: Split into half 2-3 nos.
  10. Dry Red Chillies: 3-4 (cut into 2).
  11. Peanuts: 1 Tsp(optional, i did not use it).
How to put it together:
  • Peel the Raw Mangoes and grate it. Heat oil for tempering, Add Urad dal,Channa dal, allow them to roast and turn golden brown. Then add Mustard seeds,Asefoetida powder,allow the mustard seeds to pop.
  • Now add the remaining ingredients "for tempering" into the pan , stir to mix and roast evenly.
  • Add the grated mangoes,salt,green chillies and turmeric,stir for a couple of minutes, allow to cook and let the juices combine well into the mixture,once the mixture lets oil off on the sides of the pan,without sticking. be sure the mango is cooked n done, take off the stove.
  • This is your "+Mango Thokku" which is ready to be mixed with rice...and enjoyed..!!
  • Mix as and when required with cooked rice, adjust your salt requirement and garnish with fresh chopped coriander leaves , enjoy your mango rice..;).
  • You will absolutely love the tangy flavor of this dish...;)
Notes:
  • Allow to cool and store in an airtight container in the refrigerator. Ensure you don't use a wet spoon or hands while handling the mixture, or you might just reduce the shelf life.

Basic Eggless WWF Loaf Cake..;)

Basic Eggless WWF Sponge Loaf Cake..;) A Confession : Though I've been baking for quite sometime now,i must confess a basic sponge cake was more a matter of luck in my "cake"...Oops...sorry "case"..!!  I would go on and on like mom always very rightly said "Try try never say die... " i kept trying until i continued to succeed(psst: just to ensure i'm doing it perfectly right)..!!  Finally I've succeeded & so proud to shout it out loud to the world...i managed to bake the most "Mmmm..moist Eggless WWF Sponge Cake"...).
